Bacon has long been one of the most popular and prominent components of American table fare. Bacon and eggs" just rolls off your tongue long before the waitress at your local diner can get your cup of coffee set before you. The BLT celebrates all that's right with one of the summer's simplest sandwiches. And burgers? Well, why have a cheeseburger when you can have a bacon cheeseburger Building on those red-white-and-blue foundations, author Jennifer L.S. Pearsall has taken all the savory, smoky-sweet goodness that is bacon and elevated its status. Working this succulent cured meat into dishes ranging from comfort to extraordinary, basic to complex, and across the spectrum of breakfast, lunch, appetizers, dinners, and desserts-yes, desserts-Pearsall has taken the uses of bacon to new heights. As she puts it, I can't think of anything bacon doesn't work with." There's just something about it that seems to complement every other food it comes in contact with and across the range of sensations we normally associate with taste-salty, sweet, sour, and bitter. But, during Pearsall's time in the kitchen putting together this book, she found that bacon also qualifies as umami, that fifth taste sensation that, roughly translated, simply means good flavor." Sure, bacon can be a dominant feature in something like a well-topped burger, a place where you really want to taste the bacon as a whole. But dice it fine and work it into a dessert crust, a bread dough, pulled pork, anything, and now you've got a dish that just has something. Something more than it did without this wonderful meat!

The tiny town of Chewandswallow was very much like any other tiny town except for its weather which came three times a day, at breakfast, lunch and dinner. But it never rained rain and it never snowed snow and it never blew just wind. It rained things like soup and juice. It snowed things like mashed potatoes. And sometimes the wind blew in storms of hamburgers. Life for the townspeople was delicious until the weather took a turn for the worse. The food got larger and larger and so did the portions. Something has to be done in Chewandswallow. and in a hurry.

From traditional seaside holiday treats like candy floss, ice cream and fish 'n' chips, to the British fascination for cooking and baking, the Victorian era has shaped British culinary heritage. Victoria's austere attitude after an age of Regency indulgence generated enormous cultural change. Excess and gluttony were replaced with rigid tradition and morally upright values, and Victoria's large family became the centre of the cultural imagination, with the power to begin new traditions. If Queen Victoria's family sat down to turkey on Christmas day, so did the rest of the nation. Food was a significant part of the Victorians' lives, whether they had too much of it or not enough. The destitute would be fed gruel in the workhouses the archetypal words of Dickens's Oliver are imprinted on our minds: 'Please, sir, I want some more.' The burgeoning street traders spilling over from the previous century devolved into a whole new culture of 'mudlarks', trotter boilers, food slop traders and sewer 'toshers', to name but a few. Wealthy Victorians feasted to excess on the newly emerging trend for breakfast, lunch and tea. Public dining became de rigeur, and, like the outdoor 'pique-nique', introduced both controversy and a new way of eating. Victorians also struggled against many of these trends, with the belief that the control and denial of food were akin to healthy moral values. This was the era of cooking, educating and training in food management, combined with the old world of superstition and tradition, that changed British society forever.
